Gumdrop Cookies


This is them before they were cooked. These cookies are exactly like big fat cookies, but with gumdrops instead.

Makes: About 30 cookies

Prep/Cook time: About 40 minutes

You’ll need:

  • 1 package yellow cake mix with pudding
  • 1/2 cup water
  • 2 eggs
  • 30 gumdrops, cut in half

How to make it:

  1. Heat oven to 375 degrees. Grease cookie sheet with shortening.
  2. Prepare the cake mix as directed on package except- use 1/2 cup water and 2 eggs. Omit salad oil. Drop the dough by rounded tablespoonfuls 3 inches apart onto the greased cookie sheet. Add 2 half’s of a gumdrop to each cookie.
  3. Bake 8 to 10 minutes or until no impression remains when a cookie is touched lightly. Cool on cookie sheet 1 minute, then lift the cookies to rack with pancake turner.

How to make it:

  1. Heat oven to 375 degrees. Grease cookie sheet with shortening.
  2. Prepare the cake mix as directed on package except-use 1/2 water and 2 eggs. Omit salad oil. Drop dough by rounded tablespoonfuls 3 inches apart onto greased cookie sheet. Sprinkle with 1 cup chocolate chips.
  3. Bake 8 to 10 minutes or until almost no impressions remain when a cookie is touched lightly. Cool on cookie sheet 1 minute, then lift the cookies to rack with pancake turner.

Graham Cloud Suprise


When I made it, I used lemon pudding.

Makes: About 8 Slices

Prep/Freeze time:  1 hour 20 minutes

You’ll need:

  • 10 to 20 squares graham crackers (Depends on upon size of pan)
  • 2 tablespoons to 1/4 cup melted butter (See above)
  • 1 package 4-servings instant pudding mix, any flavor
  • 1 1/2 cups milk
  • Cool whip
  • Small piece of chocolate bar

How to make it:

  1. Line loaf pan with plastic wrap; allow enough to hang over.
  2. Place crackers in a plastic bag. Close bag. Using a rolling pin, crush the crackers. Put in a mixing bowl along with butter. Mix well. A little can be left over to sprinkle on the finished dessert.
  3. Put crackers and butter mixture in loaf pan and press down.
  4. In a large mixing bowl put pudding mix and 1 1/2 cups milk. Mix as directed on package. Pour into loaf pan and spread over crust.
  5. Spread cool whip over top. Make chocolate curls and  finish with crumbs. Freeze.

Fudge


This fudge may have white spots on the edges, but it's fine. It's just that the butter didn't want to combine with the other ingredients so it tried to escape but failed.

Makes: About 9 Pieces

Prep/Cool time: 1 hour 10 minutes

You’ll need:

  • 1 pound confectioners sugar
  • 1/2 cup cocoa
  • 1/4 cup milk
  • 1/2 cup butter
  • 1 tablespoon vanilla

How to make it:

  1. Blend sugar and cocoa in 2 quart casserole. Add milk and butter. DO NOT STIR!! Microwave at 100% power for 2 minutes, then stir well. Add vanilla. Stir until blended. Pour into buttered freezer-safe container. Refrigerate until set, about  1 hour. Cut into squares. Freeze well.

Ham and Cheddar Horns


The rolls on the right have jam in them, because my brother is a vegetarian (Shame on him...).

Prep/Cook time: About 30 minutes

You’ll need:

  • Refrigerated crescent rolls
  • Butter
  • Shredded cheddar cheese
  • Finely chopped fully cooked ham

How to make it:

  1. Pre-heat oven to 375 degrees F. Tear along crescent roll perforations. Place on a ungreased baking sheet.
  2. Spread lightly with soft butter.
  3. Sprinkle each triangle with cheese and cooked ham.
  4. Starting at large end, roll dough toward point. Fold ends in slightly to form “horns”.
  5. Bake in oven 11 to 13 minutes or until golden. Serve hot.
